What you'll do
Meet your chef in central Florence and step inside a welcoming Tuscan trattoria, where your cooking adventure begins. If you're joining the morning class, you'll first walk together to Mercato di Sant'Ambrogio, a lively neighborhood market loved by locals. As you wander among stalls piled high with seasonal produce, meats, cheeses, and fresh bread, your chef will introduce you to the ingredients that define Tuscan cuisine. Together, you'll select everything needed for your class before returning to the kitchen to start cooking.
Aprons on, you'll begin by preparing traditional sauces, including a slow-simmered ragù and a fresh tomato sauce that will later complement your pasta. While the sauces cook, you'll knead pasta dough using simple ingredients—eggs and flour—and learn the techniques behind achieving the perfect texture. As the dough rests, your attention turns to dessert. With your chef's guidance, you'll prepare classic tiramisu, whipping mascarpone cream and assembling its iconic layers.
While the tiramisu chills, take a short break to sample typical Tuscan appetizers while your chef shares stories about Italy's longstanding culinary traditions. Then it's time to shape your pasta. You'll roll and cut tagliatelle and craft ravioli, filling it with ricotta, learning the skills of a traditional sfoglina (artisan pasta maker) step by step.
Finally, sit down with your group to enjoy the meal—and their company—you've created together. Paired with a glass of house wine, your handmade pasta and tiramisu taste even better knowing you prepared them yourself. By the end of the class, you'll leave with new cooking skills, a deeper appreciation for Tuscan food culture, and recipes you can recreate long after your time in Florence. Buon appetito!
