To get started, I'm going to attach some example itineraries for a few road trips that we recommend for this time of year to give you some more information on what is possible to see and do in the various regions, and to help get a better idea of what type of trip would be best for you.

- Detailed day wise sightseeing itinerary tailored to your interests and preferences, whereby you will see the most famous attractions and also lesser known gems

That sounds very promising so far. Can we get a link to see the type of accommodation and day trips?

Accommodation depends on what is available and also your flight timings since we plan your daily itinerary so as to balance your driving time. 
All the hotels we work with are well rated and there should be no problems. But once we have booked all the hotels, I can send you a list and you can let me know if you have any concerns. We can then find alternatives in the same price range. 
Examples are Hotel Arnarstapi in Snaefellsnes and Hotel Borealis in the Golden Circle area.

The glacier hiking is on the South Coast. There are many good operators, the tours are comparable, so it depends on what fits your itinerary best. 
The lava caving tour is in the Vatshellir cave in Snaefellsnes.

I just read in your messages about 6-7 persons and 2 cars. I am sorry. 
The quote is for 4 persons in one car but let me know once you decide and I can send you an updated price.

The hotels look fine. We have a group of 6 at the moment with 2 cars and we would like to have one day in Reykyavik too. The rooms would be 2x doubles and 1x twin.
