If you're looking for a holiday with outdoor activities and hiking, I recommend the Westfjords and Snaefellsnes. 
The Westfjords has plenty of opportunities for hiking, kayaking, natural hot pools and the best seafood restaurant in Iceland. The Latrabjarg bird cliffs are the best place in Iceland to get up close to the puffin. 
The famous glacier volcano Snaefellsjokull dominates the Snaefellsnes peninsula and you can enjoy great walks along the coastline and whale watching is really good from Grundarfjordur.
