December is a great time to experience the beautiful winter landscape, see northern lights and do some fun winter activities like ice caving.

Here is an itinerary to the South Coast and Snaefellsnes which would be perfect for you:

I can include all the places and activities you have mentioned. Your detailed itinerary will provide tips for the northern lights, food recommendations and offbeat lesser known sights along your route.

The daylight is only 4 hours but we will arrange the itinerary and accommodations so as to balance your daily driving time.

December can have a fair bit of snow. I just wanted to make sure that you had experience with winter driving conditions - snow and ice on the roads, and bad weather (hopefully not).
my partner will be driving as he has driving in the snow experience...but are the conditions really tough at that time? will we be ok in a standard ford focus or will we require a I hear driving on the ring road in winter wasnt recommended

You will need a 4X4 and this is only the South Coast and Snaefellsnes, so if he has experience with winter driving, it should be fine. 
You also have a lot of time with 9 days and we will balance your daily driving time.
