I can see that you are interested in the fjords hiking activities. For that, the south-western part of Norway around Bergen and Stavanger! Since you are looking at a trip in the end of October, I would not recommend Kjerag and Trolltunga since snow has already started to appear in the Norwegian highlands, but the Pulpit rock is definitely a nice and moderate alternative. There is a direct flight from London Heathrow to Stavanger. I Have a few suggestions for you:

1) You could arrive in Stavanger and hike the Pulpit rock the second day as well as explore Stavanger. Then, you could take the train to Bergen – the city between the seven mountains. There is a lot of great hiking trips in and around Bergen! I can personally join you on a hike if you are interested in that as well to show you some local favorites since I live in Bergen and know the city quite well and love hiking! Alternatively, I can provide you with maps and suggested hikes for you and your family. Eventually, you can departure from Bergen.

2) A second option is to arrive in Bergen, which is also gateway to the gateway to the fjords, spend a day or two there before taking the train towards Oslo where you include a stop in Flåm and Nærøyfjorden where you can do several exciting activities such as a RIB boat trip on the fjords for instance or spectacular hikes in the area.
